Preheat oven to 250 degrees.
Add olive oil to a cast iron skillet and swirl to coat the bottom.
Place the drumsticks, in a single layer, in the cast iron skillet. Season generously with salt and freshly ground pepper.
Bake for 20 minutes.
Increase the oven temperature to 425 degrees and bake for 30 minutes more.
For a spicy kick, whisk together the hot sauce and honey. Drizzle over the drumsticks and toss to combine.
