Preheat the oven to 400 degrees.
Add the shallot and garlic to a small food processor and pulse several times to mince.
In a skillet over medium heat, heat the olive oil. Add the minced shallot and garlic. Sauté for 5 - 7 minutes until they are browned and aromatic.
In a large bowl, combine all of the ingredients (not the pasta sauce) and mix until well incorporated.
Cover the bottom of a baking dish with 1/2 C of pasta sauce.
Shape the meat mixture into medium-sized meatballs and place in the baking dish.
Add the remaining pasta sauce, covering the meatballs. Bake for 30 minutes or until the meatballs are cooked through.
While the meatballs are baking, prepare the pasta according to package instructions.
Serve the meatballs and sauce over the pasta, garnished with fresh oregano and grated parmesan.
