Preheat the oven to 250 degrees. Line a rimmed baking sheet with parchment paper.
Place the cherry tomatoes on the baking sheet. Add the crushed garlic. Sprinkle with oregano. Drizzle with olive oil to lightly coat. Season with sea salt and cracked pepper.
Roast the tomatoes for 2 1/2 to 3 hours until they are shriveled and lightly browned.
Remove from oven and place 2 - 3 roasted tomatoes on each slice of toasted baguette.
Top with shaved Parmesan and torn fresh basil. Serve warm!
Dipping the toasted baguette in the warm roasting pan juices is pure bliss!
