

Prepare the pasta according to package instructions.
While the pasta is boiling, add the roasted tomatoes with oil and garlic to a large skillet, over medium heat.
Sauté for 2 minutes.
Add the chopped spinach, toss to combine and sauté for 1 minute more.
Add the cooked pasta to the skillet and season generously with sea salt and pepper. Toss well to combine.
Serve garnished with freshly grated Parmesan.
