Preheat oven to 400 degrees.
Put the cubed sweet potatoes in a large bowl.
In a small bowl, whisk together the olive oil, honey, lime juice, salt and pepper. Pour mixture over sweet potatoes and toss to combine. Let marinate for 10 minutes.
On a rimmed baking sheet, lined with parchment paper, spread the sweet potatoes evenly in a single layer. Bake for 30 - 35 minutes or until the sweet potatoes are tender and lightly browned.
While the potatoes are roasting, make the zesty yogurt drizzle.
In a food processor, pulse to combine cilantro, jalapeño, garlic, lime juice and white wine vinegar. Slowly add the olive oil until combined. Add the yogurt and pulse to combine.
Serve the potatoes drizzled with the zesty yogurt sauce.
