Preheat oven to 350 degrees. Grease a loaf pan and set aside.
In a large bowl, add the mashed bananas, melted butter, honey, eggs and vanilla bean paste. Mix to combine.
Add the flour, baking soda, cinnamon and salt. Mix well.
Fold in the chocolate chips and shredded coconut.
Transfer the batter to the prepared loaf pan. Bake for 45 to 50 minutes or until center is just set.
Remove and let cool for 15 minutes. Serve with a smear of butter.
