I highly recommend you use a food processor to shred your vegetables.
Add all of the ingredients for the sauce to a medium bowl. Whisk to combine. Set aside.
In a large dutch oven, heat the olive oil over medium heat.
Add the ground chicken and sauté, breaking into small pieces, until completely cooked.
Add the vegetables and sauce. Simmer for 7 - 10 minutes, stirring occasionally.
Top pieces of bibb lettuce with mixture, garnish with cilantro, roll up and enjoy!
