Preheat oven to 350 degrees. Line a rimmed baking sheet with parchment paper.
In a medium bowl, whisk together the honey, bourbon and olive oil.
Add the pecans and sea salt and toss to combine.
Spread the mixture on prepared baking sheet and roast for 15 - 20 minutes or until the pecans are golden brown.
Allow to cool then transfer to an airtight container. These will keep for one week.
