Preheat oven to 350 degrees. Line a 12-capacity muffin tin with baking cups.
Cook the diced bacon for 5 minutes over medium-high. Drain off the fat.
Add all of the ingredients to a large bowl and mix until just combined.
Divide the mixture evenly between muffin baking cups. Bake for 20 - 22 minutes or until cooked through.
Transfer the muffins to a wire rack to cool for a few minutes before serving.
