Preheat oven to 400 degrees.
Combine apples, pear, lemon zest, lemon juice, sugar and spices in a bowl and set aside to marinate while the oven preheats.
When the oven is ready, place the puff pastry sheet on a parchment lined, rimmed baking sheet.
Place the fruit mixture evenly on the pastry sheet, leaving a 1-inch border. Pinch the pastry edges to get a rippled/wavy effect.
Bake for 20 - 22 minutes or until the galette is cooked and slightly golden.
Drizzle with the salted caramel sauce and enjoy immediately!
